Bean pâté is not only delicious but also highly nutritious, as it is rich in proteins and other beneficial microelements. For crafting a flavorful bean pâté, varieties with a smooth, creamy texture and neutral taste are ideal, as they wonderfully absorb the flavors of spices and other ingredients. For example, white beans such as "Yaskа" or "Cannellini" pair excellently with garlic, lemon juice, olive oil, and various spices.
Boil the white beans until tender for 1-1.5 hours, as Chef Yevhen Klopotenko suggests. Peel and dice the onion and carrot. Sauté the vegetables until cooked in 3 tablespoons of oil over low heat.
Combine the onion, carrot, and boiled beans. Add a teaspoon of apple cider vinegar, salt to taste, coriander, and 2 cloves of garlic.
Transfer the mixture to a blender, add 50 ml of oil, and blend until smooth. Serve with toasted black bread if desired.
