Homemade vatrushkas are a classic of Ukrainian cuisine, always associated with warmth and comfort. The soft dough and delicate cheese filling make this pastry a true delight for the taste buds. Vatrushkas can be prepared to suit any preference by adding various fruits or berries to the cheese.

Ingredients:

  • milk – 250 g;
  • dried yeast – 10 g;
  • sugar – 80 g;
  • butter – 100 g;
  • eggs – 2 pcs;
  • a pinch of salt;
  • flour.

For the filling:

  • cottage cheese – 0.5 kg;
  • sugar (depending on the acidity of the cheese) – 100-150 g;
  • eggs – 2 pcs;
  • vanilla;
  • sour cream – 2-3 tbsp.

Preparation method:

First, warm the milk until it is lukewarm and dissolve the yeast, sugar, and salt in it. Then add melted butter (not hot) or margarine, as noted by Chef.

In a separate bowl, beat the eggs and add them to the milk mixture. Gradually incorporate the flour, kneading until you achieve a soft, elastic dough. Once ready, cover it with a cloth and let it rise for two hours.

For the filling, pass the cottage cheese through a sieve to make it smooth. Add the eggs, sugar, vanilla, and sour cream, mix well, and refrigerate.

Once the dough has risen, divide it into pieces the size of small apples and place them on a baking sheet, leaving space between them. Allow the pieces to rise again.

Using a glass, gently create an indentation in each piece to prevent the filling from spilling during baking. Fill these indentations with the cheese mixture and distribute it evenly with a spoon.

Brush the vatrushkas with a mixture of egg and milk, and bake at 180°C until golden brown – this usually takes about 17 minutes.
