Ramen is not just a dish; it's a true symbol of Japanese cuisine that combines deep flavors and a variety of textures. Its recipe varies by region, but the key ingredients include a delicious broth, noodles, and various toppings.
Prepare all the ingredients for making pork ramen. It's best to start the preparation the night before, as the meat needs to be marinated overnight, says chef Yevhen Klopotenko.
Trim the pork tenderloin of excess fat and membranes. Place the meat in a container and sprinkle with salt. Leave it in the refrigerator overnight.
Prepare the broth. Rinse the meat to remove the salt and place it in a pot. Add 1.5 liters of water along with 2 sticks of cinnamon, a star of star anise, garlic, and the ginger root. Simmer the broth for about 30 minutes.
Cook the rice noodles according to the instructions on the package. You can drop them into boiling salted water for 5-10 minutes until they become soft.
Slice the green onions into strips of 3-4 cm, the chili pepper into thin slices, and the remaining half of the ginger into thin strips.
Drain the cooked noodles in a colander. Strain the broth through a sieve, removing the spices and garlic, as they have already imparted their flavors to the dish.
To enhance the flavor, pour 4-5 tbsp of soy sauce into the broth. Slice the cooked meat into serving pieces. Boil the eggs "soft-boiled" by cooking them for 3 minutes after the water starts boiling.
For presentation, place the noodles in bowls. Pour the broth over them, add a few pieces of meat per serving, slices of chili and ginger, green onions, and cilantro sprouts. In each bowl, add a halved egg and a few drops of sesame oil.
